Wine Magic™ has been invented and developed by Margaret River winemaker James Pennington (BSc BApp Sc) to allow wine consumers to enjoy wine with reduced preservatives. Wine Magic™ is the first product of its type in the world and received an Innovation Patent in 2010.
The use of preservatives is an important part of producing wine of high quality. The preservatives most commonly used are generally referred to as sulfites and may come in various forms usually listed as pres. 220 or 224. They are largely found in the form of Sulphur Dioxide gas.
The addition of Wine Magic™ converts these sulfites into harmless by products called sulfites. The level of sulfites remaining after treating with Wine Magic™ is usually below 10ppm and this is considered preservative free by the FDA and Food Standards code.
The chemistry that is involved in this process has been used in wineries for decades allowing winemakers to reduce the level of preservatives as required.
What is Inside
The main ingredient in Wine Magic™ is a specially produced diluted (<3%) food grade hydrogen peroxide. Hydrogen Peroxide is a permitted additive for wine as approved by the Australian National Health and Medical Research Council – Food Standards Code 4.5.1.
The level of sulfites remaining after treating wine with Wine Magic™ is usually below 10ppm. This is considered preservative free by the FDA and Food Standards code. It has been designed to work most effectively on young wine styles made to modern winemaking specifications.
It is not recommended to use Wine Magic™ with aged wines or “old world wines” and European Style Wines as they have low levels of preservatives and there may be some excessive oxidation.
Instructions for a glass
Add 1 drop of Wine Magic™ to a 150mL glass of wine, mix gently.
Instructions for a bottle
Add 5 drops of Wine Magic™ in a 750mL bottle of wine, mix gently. Treated wine is best consumed within 24 hours.
